Sometimes, though, you want that edge sharper and one of the best ways to do that the traditional method with a sharpening stone like the Japanese Water Sharpening Stone. This two-tone stone has two different grits. The orange side has a medium 1,000 grit and the white side an extremely fine 1,500 grit. This is helpful in the sharpening process, as the medium grit will help you approach the sharpness you want and the finer grit allows you to get an even sharper edge. Both sides have a dragon on them to remind you that this is a Japanese sharpening stone.
This type of sharpener is called a water stone because it needs to be wet as you sharpen. As long as you apply the right pressure and angle on the whetstone as you slide the knife edge along it, you should see results pretty quickly. Water stones are that simple!
